Carnitas tags: pork, meat, slow
amounts x
1.0 onion sliced
4.0 lb butt roast
4.0 c chicken broth
1.0 T coriander
1.0 T cumin
1.0 tsp oregano dried
3.0 chiles in adobo sauce
2.0 bay leaves

Place all ingredients into a large pot.

Make sure the meat is covered with broth.

If you add more broth, be sure to add seasoning as well.

Simmer for 3-4 hours, or until meat is falling off the bone.

Let sit for 30 minutes in juice.

Roast at 450 for 20-30 minutes.

Pull meat apart with a fork or tongs.
