Peach Ice Cream tags: dessert, cold, fruit

0.5 c sugar
1.0 dash kosher salt
0.75 c whipping cream
1.0 vanilla bean
2.0 c half and half
4.0 peaches peeled and sliced

Put the peeled peach chunks in a medium sauce pan and salt lightly. Heat on medium heat, stirring often, until color brightens and chunks soften slightly. Do not brown.

Turn off heat and move peaches to a large mixing bowl together with the sugar. Pour half and half and cream into the warm pan and scrape in the vanilla bean.

Mix peaches and sugar to coat and mash or beat until desired texture.

Pour warm half and half into peaches and stir until combined.

Cover and chill.

Pour chilled mixture into your favorite ice cream maker and enjoy.
Notes:
Alter the amount of whipping cream to change the creaminess of the final product (up to 1 cup, you may leave it out entirely for icy ice cream).

For extra vanilla taste, toss the used vanilla bean into the mixture while chilling.

It is very important that the mixture is near freezing when it goes into the ice cream maker.
